Baked Custard French Toast

Ingredients:
6-8 slices acceptable bread (or enough to fill the bottom of a 9” x 13” baking dish)
3 eggs
3/4 cup rice milk
1/4 cup maple syrup
1/4 cup honey
1/4 cup melted Spectrum Shortening (100% Palm)
1 tsp vanilla extract

Instructions:
1. Preheat oven to 350 degrees.
2. Grease a 9” x 13” baking dish and arrange bread slices in a single layer on the bottom of the dish, breaking slices into smaller pieces as needed to fit.
3. In a medium bowl, beat the eggs slightly.
4. Stir in remaining ingredients until mixture is smooth.
5. Pour egg mixture over bread.
6. Let stand for 5 minutes.
7. Bake uncovered for 30 minutes or until lightly browned.
8. Cool for 5 minutes before serving.
9. Sprinkle with powdered sugar, if desired.
